Menu Plan Monday: My “New” Cookbooks!

I’ve talked about it countless amounts of times – the value of your local library.  I wear. mine. out.  ESPECIALLY when it comes to cookbooks.  The thing about cookbooks?  You just can’t ever tell whether it’s going to be a good one or not.  That’s why I specifically enjoy checking out cookbooks at the library.  If there are enough recipes in it that make it worth buying, THEN I might consider it.  Well, my friends…I found one of the most amazing cookbooks EVER last week.  It’s the Moosewood Restaurant cookbook, and I can’t get enough of it.  Everything in it is delicious.  (I even made gourmet popcorn and homemade strawberry lemonade from it as a snack this week.  YUM!)  Hence, almost all of my recipes come from it this week.  Links will come later, as I cook them and share recipes. :)

Here is what I have planned:

Monday – Having my little brother-in-law over for a “sleepover”.  Pizza, chips, and cokes it will be for us.

Tuesday -Indian Curried Potato Wraps

Wednesday -Black Bean Enchiladas with Encinada Enchilada Red Sauce

Thursday – Quinoa Stuffed Peppers

Friday – Spinach Walnut Pesto Pasta

Saturday – Mac n Cheddar with Broccoli

Sunday -Leftovers or Frozen Meal (Morningstar burgers, wings, etc.)

    @Jess, I got them out of the Moosewood Cookbook that I mention in the intro of this post. That cookbook is simply DELISH! :)
