Menu Plan Monday: Keeping It Simple!

Tried to keep the menu simple this week, and pull from what I had on hand.  Here’s what I came up with:

Monday - Spinach, Feta Cheese, and Tomato Omelets

Tuesday - Ramen Noodles with mixed frozen veggies

Wednesday - Dinner with family

Thursday – Baked Tofu Sticks (from Moosewood Cookbook), salad, side veggies

Friday – Veggie Fajitas

Saturday - Broccoli, Rice, Cheese, Walnut Surprise

Sunday – Pancakes and fresh fruit
